Why this recipe works:
If you're a fan of a classic Caesar salad, then get ready to take it up a notch.
As much as I love the crisp romaine, creamy dressing, and Parmesan goodness, I always find myself wanting more-more protein, more texture, and something heartier to truly satisfy.

That's where this sandwich comes in. By layering a perfectly crispy, pan-fried chicken cutlet onto toasted bread and topping it with a fresh Caesar salad, you get the best of both worlds.
Ingredients you'll need to make this recipe.

For the chicken:
Chicken breast
Seasoned Italian bread crumbs
Eggs
Flour
Olive oil
Seasonings:
Salt, pepper, garlic powder, onion powder, paprika
For the Caesar salad:
Romaine Lettuce
Parmesan cheese
Caesar dressing (Store bought or homemade)
Black Pepper
How to make a Crispy Chicken Caesar Salad Sandwich.
Preparing the chicken
Prep the chicken by trimming any excess fat or pieces hanging off. Then use a sharp knife and carefully cut the chicken breast lengthwise to split in half.
If the chicken is still too thick you can place some plastic wrap on top and pound it out to make it thinner.

Preparing the breading.
To bread the chicken you will need 3 separate containers or shallow dishes. One for flour, one for the egg wash, and one for the bread crumbs.

I place the flour in one container and add about a teasspoon of salt and pepper and mix that together with a fork. The egg wash takes 2 eggs, make sure those are also mixed together well.
To the bread crumbs add a tablespoon each of garlic powder, onion powder and paprika. Also add about 2 teaspoons of salt and pepper. Mix that together to combine.
Breading the chicken.
To bread the chicken, place your chicken breast slices one at a time into the flour then flip to make sure both sides are evenly coated. You can use your hands, a fork or tongs to hold the chicken.
Shake off the excess and then dip them into the egg wash, flipping once or twice to make sure each piece is coated.
Finish by laying the chicken on the bread crumbs, press down to make sure it really sticks, flip and do it again.

Each piece of chicken, including the sides, should have a nice even layer of breading on them.
Frying the chicken.
In a large pan, add about a ½ inch of olive oil and heat that up over medium heat to 350°F. Lay the chicken breast down into the oil and fry for a few minutes on each side.
You are looking for a golden brown color and the internal temperature of the chicken to be 165°F.

Depending on the size of your pan, you will have to work in batches, doing 1-2 pieces at a time.
Once the chicken is fried and done, place them onto a wire rack with a pan underneath or onto a plate lined with a paper towel to absorb any excess grease.
Making the Caesar salad.

Making the Caesar salad is very easy. Wash and chop some romaine lettuce and place that into a bowl.
Add shredded parmesan cheese (fresh is best) , cracked black pepper, and your favorite store-bought Caesar dressing.

Assembling the sandwich .
Split your sub rolls in half and toast them under the broiler in your oven for a minute. Then add a dollop of caesar dressing to bottoms of the rolls and spread that out.

To the bottom roll add a slice or two (if you're really hungry) of the fried chicken breast, then top with a little parmesan cheese, Caesar salad and more cheese.

The crispy chicken, the creamy dressing, the warmth of the bread-it all comes together for a bite that's bold, balanced, and completely addictive.

- 2 large chicken breast
- 2 6-8 inch sub rolls
- 1.5 cups seasoned Italian Bread crumbs
- 2 cups of chopped romaine lettuce
- 1 cup of Caesar dressing (Store bought or homemade)
- ½ cup of grated parmesan cheese
- 2 beaten eggs
- 1.5 cups of flour
- ¼ cup of olive oil
- 1 tablespoon of Salt
- 1 tablespoon 0f Black pepper
- 1 tablespoon of Garlic powder
- 1 tablespoon of Onion powder
- 1 tablespoon of Paprika
Instructions
- Trim any excess fat or loose pieces from each chicken breast. Split the breast length wise by running your knife through the middle. Lay each chicken breast under plastic wrap and pound them out to make thinner if desired.
- Make a breading station with 3 shallow dishes. 1 with flour that has been seasoned with a teaspoon of salt and pepper, 1 with 2 beaten eggs and 1 with seasoned Italian bread crumbs with the remaining salt, pepper, garlic powder, onion powder and paprika mixed in.
- Take your chicken breast and first coat each side with the flour, then the egg wash and then the bread crumbs. Make sure the chicken is completed covered on each side.
- Add olive oil to a large pan so that it's about a ½ inch deep. Bring the oil up to temperature over medium heat to 350°F.
- Carefully lay 1-2 pieces of chicken into the oil and fry until golden brown and 165°F internal. Flip back and forth 1-2 times as needed. Once the chicken is done, place onto a wire rack with a pan underneath or on a plate lined with paper towels to absorb any excess oil.
- In a large bowl make the caesar salad by combining chopped romaine lettuce, ½ cup of caesar dressing, ¼ cup of grated parmesan cheese and a pinch of black pepper.
- Split sub roll in half and toast under your ovens broiler for 30-60 seconds until they are at your desired doneness. Watch carefully as they will toast fast.
- Add a spoonful of caesar dressing to the bottom of the sub rolls and spread it. Then add 1-2 slices of fried chicken breast, followed by a layer of Caesar salad, and a sprinkling of parmesan cheese. Place the top roll on and enjoy! Cut sandwich in half for easier handling.
- Prep Time: 20 minutes
