
All of the flavors you love from a jalapeño popper nestled between toasted brioche buns makes this the ultimate grilled cheese. With just a few simple ingredients like cream cheese, jalapeños, crispy bacon and mozzarella this really is super satisfying.

Ingredients you'll need for jalapeño popper grilled cheese.

- 1 block of cream cheese
- 6-8 slices of crispy bacon
- ½ cup of pickled jalapeños (Can also use fresh)
- ¼ cup of green onions
- 1.5 cups of shredded mozzarella cheese
- 1-2 teaspoons of your favorite BBQ seasoning (I'm using my All Night rub)
- 4 Brioche Buns
- ½ stick of butter

Much like my Chopped Italian sandwich everything is done on one cutting board so there aren't many dishes involved. Simply add all of the ingredients together, chop and spread! It doesn't get much easier than that.
When I'm done the only thing to clean is my cutting board.
How to make Jalapeno popper grilled cheese.
Onto a large cutting board pile on all of your ingredients. Start with a base layer of cream cheese that is semi softened, then add crispy bacon, pickled jalapeños, green onions and shredded mozzarella cheese.

Chop and spread everything together so the bacon, jalapeños and green onions are in bite sized pieces. Make sure everything is incorporated well with the cream cheese and shredded mozzarella.

Season the jalapeño popper spread with your favorite bbq seasoning. Feel free to try my Homemade BBQ Seasoning or my All Night Rub.
For the bread we are using brioche hamburger buns and flipping them upside down. Of course you can use a good quality bread like sourdough if you prefer.
Take a few spoonfuls and spread that nice and thick.

Spread on some softened butter to the outside of the buns and place them directly onto your griddle or cast iron pan.

After a 1 minute or two flip to toast the other side and close the lid on your griddle or cover if using a pan. This will allow the cheese to melt inside and get nice and gooey!

Jalapeno Popper Grilled Cheese (Chopped style)
All the bold, creamy, spicy, cheesy flavor of a jalapeño popper-smashed into a gooey grilled cheese sandwich using buttery brioche buns. Quick, satisfying, and made with just one cutting board!

Ingredients
- 1 block (8 oz) cream cheese, softened
- 6-8 slices crispy bacon
- ½ cup pickled jalapeños (or fresh, if preferred)
- ¼ cup green onions
- 1½ cups shredded mozzarella cheese
- 1-2 teaspoon BBQ seasoning (like Ninjacue "All Night" rub)
- 4 brioche buns, flipped inside out
- ½ stick (4 tbsp) butter, softened
Instructions
- Chop & Mix: On a large cutting board, add the cream cheese, bacon, jalapeños, green onions, and shredded mozzarella. Chop and mix everything together until well combined and spreadable.
- Season It: Sprinkle in your BBQ seasoning and mix again until evenly incorporated.
- Assemble the Sandwiches: Flip the brioche buns upside down (so the bottoms face outward). Spread a generous layer of the jalapeño popper filling onto the inside of each bun half.
- Butter the Outside: Spread softened butter on the outside of each bun half.
- Grill It: Heat a griddle or cast iron pan over medium heat. Place sandwiches butter-side down and grill for 1-2 minutes per side until golden brown.
- Melt & Press: Flip and gently press with a spatula. Cover with a lid or close the griddle to help melt the cheese. Cook another 1-2 minutes until gooey and crisp.
- Serve Hot: Slice and serve immediately while hot and melty. Perfect for lunch, parties, or anytime indulgence!
