Chop & Mix: On a large cutting board, add the cream cheese, bacon, jalapeños, green onions, and shredded mozzarella. Chop and mix everything together until well combined and spreadable.
Season It: Sprinkle in your BBQ seasoning and mix again until evenly incorporated.
Assemble the Sandwiches: Flip the brioche buns upside down (so the bottoms face outward). Spread a generous layer of the jalapeño popper filling onto the inside of each bun half.
Butter the Outside: Spread softened butter on the outside of each bun half.
Grill It: Heat a griddle or cast iron pan over medium heat. Place sandwiches butter-side down and grill for 1–2 minutes per side until golden brown.
Melt & Press: Flip and gently press with a spatula. Cover with a lid or close the griddle to help melt the cheese. Cook another 1–2 minutes until gooey and crisp.
