Instructions

Step 1: Season and grill the chicken
Season chicken thighs with BBQ or all-purpose seasoning and a drizzle of olive oil. Grill over medium heat until the internal temperature reaches 165-170°F. Let them rest, then chop into bite-size pieces.

Step 2: Make the buffalo chicken mixture
In a bowl combine cream cheese, sour cream, ranch, buffalo sauce, shredded colby jack, and the chopped chicken. Mix until smooth and well blended.

Step 3: Toast the bread and spread buffalo chicken.
Lay the Texas Toast on a baking sheet and bake according to package directions until lightly golden and crispy. Set aside.
Spread a generous layer of the buffalo chicken mixture onto each piece of Texas toast. Top with a little extra shredded cheese.

Step 4: Finish under the broiler
