Why use a slow cooker?
Traditional buffalo chicken dip is baked in the oven and takes about 30 minutes to cook. Its good for 20 minutes and then cools down quickly which becomes hard to eat.
Using a slow cooker allows the dip to stay warm all day long!
What kind of chicken is best for buffalo chicken dip?
This recipe uses rotisserie chicken because its cheap and you can get it at just about any grocery store. Any kind of left over chicken works as well, baked or grilled.

Can I use raw chicken?
I've seen some recipes use raw chicken breast as its' cooked along with the cream cheese and buffalo sauce. Then it is pulled out, shredded and added back in with the remaining ingredients.
I like to keep it simple and use rotisserie chicken. It is flavorful and easy to work with.
Is buffalo chicken dip healthy?
Buffalo chicken dip is keto friendly and low carb. While it may be a little higher in calories it does fit some diets.
What can I use to dip with?
Tortilla chips are my go to for dipping. If you are sticking with a low carb diet use celery sticks, carrot sticks or even bell peppers.

How to make slow cooker buffalo chicken dip.
Combine softened cream cheese, rotisserie chicken, sour cream, buffalo sauce and a packet of ranch seasoning.
I use ranch seasoning instead of ranch dressing because the flavor comes out a bit stronger and I think its better than just using the dressing alone.

Mix the ingredients together in the slow cooker, put the lid on and allow it to cook on low for 2-3 hours.
In the mean time chop up some green onion for garnish as well as some bacon. Cook the bacon in a pan on medium high heat until crispy. We are going to use both to top the dip with later.
Once everything is warmed through and incorporated, add shredded cheese and mix that in. Then top with another layer of cheese.

Close the lid and allow the cheese on top to melt for another 20-30 minutes on low. Add the green onions and crispy bacon on top before serving.
Dip your chips right into the slow cooker or serve a few scoops on a plate. All there's left to do is enjoy this easy buffalo chicken dip that will stay warm all day long.

Storing and reheating:
If there is a lot left over, place the lid back on the crock pot and store the whole thing in the refrigerator for up to 4 days. Then heat it back up in the crock pot before serving.
You can also transfer the leftover dip into an airtight container and microwave when you're ready to enjoy.

Slow Cooker Buffalo Chicken Dip
- Total Time: 3 hours 30 minutes

Ingredients
- 2 blocks of softened cream cheese
- 2 cups of shredded colby jack cheese
- 1 cup of sour cream
- 1 packet of ranch seasoning
- 1 cup of buffalo sauce
- 2 cups of shredded rotisserie chicken
- ¼ cup of diced green onions
- ¼ cup of diced crispy bacon
Instructions
- In a slow cooker combine 2 blocks of softened cream cheese, 1 cup of sour cream, 1 packet of ranch seasoning, 1 cup of buffalo sauce and 2 cups of shredded rotisserie chicken. Mix that all together to incorporate.
- Cover with a lid and cook on low for 2-3 hours. In the mean time dice ¼ cup of green onions and ¼ cup of bacon. Fry the bacon on medium high heat in a pan until crispy.
- Stir in 1.5 cups of colby jack cheese. Add the remaining half cup of cheese on top, cover with the lid and cook for another 30 minutes on low. Top with diced green onions and bacon just before serving.
- Serve with tortilla chips or your favorite veggies. Enjoy!
