Warning, these Candied Bacon Crackers are highly addictive! The combination of fatty bacon, crisp crackers, combined with brown sugar, and a little heat from the jalapeño makes these candied bacon crackers the perfect snack. Who would have thought?
With just a few basic ingredients, these are easy to make and they will have your guests hooked after the first bite!

Ingredients you need to make candied bacon crackers
Bacon- The salty smokey bacon is irresistible. I use thick-cut bacon.
Crackers- I use club crackers because they are the same width and shape of bacon.
Light brown sugar- Helps candy the bacon and gives a sweet bite that balances well with the jalapeño.
Black pepper- A nice contrast to the brown sugar. Fresh cracked pepper is recommended! You could also use some cayenne pepper to really spice it up!
Jalapeño- If you don't like it spicy skip these or remove all the seeds. The brown sugar helps balance the heat.

How to make candied bacon crackers

First lay out club crackers in a single layer on top of a wire rack with a baking sheet underneath. This will allow the bacon to cook evenly and will keep your smoker or oven clean.

Add a cut slice of bacon onto each buttery cracker. I've tried wrapping the cracker with the bacon pieces but I prefer just to lay them on top.

Next sprinkle brown sugar onto each piece of bacon and use your finger to spread out the sugar for an even coating.

Add some fresh cracked pepper to each piece. Then finish with a thin slice of jalapeño on each piece of bacon, followed by a little more brown sugar.

I place them into my Pitboss Smoker at 350 degrees for about 30 minutes to cook until the bacon is fully cooked through. If you don't have a smoker, the oven works great!

You know they are done when the bacon looks crispy and shiny. The brown sugar should caramelize on the bacon and the jalapeños should be soft, not crunchy.
You'll be surprised how crispy the crackers are even after they soak up all that bacon fat. I'm telling you, these are highly addictive and the only thing left to do is try them!

How to store
I doubt you will have any leftovers but if you do store them in an airtight container for a few days in the fridge. They are best eaten warm but taste great at room temperature too.

Can I use ritz crackers instead of club?
Yes you can use whatever cracker you want. I like club crackers because they are the same width as the bacon
What if I don't like Jalapeños?
You can skip the jalapeños and use hot honey, cayenne pepper or just leave them off if you don't want it spicy.
Do I have to eat them right away?
No you don't but they do taste the best right after they are cooked
Won't the crackers get soggy from the bacon?
It's a little strange actually but the crackers soak up the fat and they harden back up so you have a crispy cracker when they are finished.
Can I use my oven?
Yes you can! Bake at 350°F for about 30-40 minutes or until the bacon is to your preferred doneness. Just keep a close watch as all ovens are a little different.

Ingredients
- 12 club crackers
- 4 pieces of thick cut bacon cut into thirds
- 2 tablespoons brown sugar
- 1 tablespoon cracked black pepper
- 2 jalapeños thinly sliced
Instructions
- Lay out club crackers onto a cooking rack with a baking sheet underneath.
- Place 1 piece of bacon onto each cracker.
- Sprinkle brown sugar onto each piece of bacon.
- Add freshly cracked black pepper to each piece of bacon.
- Add one thinly sliced jalapeño to the center of each piece of bacon.
- Smoke at 350°F for 45 minutes or until bacon is cooked through. This can also be done in your oven.
Notes
* The cracker my get soft at first from the fat off the bacon but do not touch them. After a while the crackers get hard again and are perfect!
* These can be made in your oven as well at 350°F until the bacon is cooked all the way through. (30-40 minutes)

So I tried these before my party last night, party tomorrow and so I had to refrigerate them. This morning I ate one to see and although they tasted fantastic, the cracker was a bit soggy. What could I do differently tonight if I tried making them again so by tomorrow they are not soggy. I ended up having to cook them longer than 30 minutes in my oven the first time.

1) Spray my wire rack because the crackers stuck.

I tried this several times now and using 350 for 20 minutes will blacken the crackers i use and the brown sugar just burns, too. I therefore have made them without brown sugar, and they didnt go burned black. I guess the sugar is the problem, what might i be doing wrong ?

Yes the sugar is burning. Just sprinkle very lightly or reduce the heat in your oven a little.

You don't need one but it just helps with the circulation and for the fat to drip down off the bacon.

I think you could prep everything and then quickly put them together the day of. It only takes a few minutes to assemble but have the bacon and jalapeño cut ahead of time. I'm worried if you lay the bacon on the crackers overnight it might get soggy.

Holy moly! These tasty bites disappeared as soon as we took them out of the oven! You can up the temp some and also leave them in longer to cook. Also let them cool for 5-10 minutes before eating. That gives them a chance to firm up a bit as well.

These were a hit. Some got stuck to my rack but it wasn't that bad. I used black peppercorn thick cut bacon and skipped the sprinkle pepper step and made 16 with seeds in the jalapeños and 16 without the seeds in the jalapeños.
