
This easy Mexican pizza recipe is the perfect way to bring the flavors of your favorite Taco Bell menu item into your home. With crispy tortillas, a layer of refried beans, ground beef and lots of cheese, this homemade version will have your whole family begging for more.
Ingredients you need for Mexican Pizza.
Flour tortillas
Ground beef
Taco seasoning
Refried beans
Mexican blend cheese
Tomato diced
Red enchilada sauce
Sour cream
Green onions diced (Optional garnish)

What kind of tortillas do you use for Mexican pizza?
I like to use flour tortillas and get them crispy by toasting each side on my flat top grill. You can also fry the tortillas to make sure they are extra crispy, or use corn tortillas if you like them better.
How to make easy Mexican Pizzas.
Prepare the Meat and refried beans.
I'm using my flat top grill but you can also do this on your stove using a cast iron pan or skillet. Start by heating up your griddle to medium high heat and cook the ground beef until browned.
Add a tablespoon of taco seasoning or try my homemade Tex Mex seasoning. Drain any excess fat and set aside for later assembly.

If using leftover taco meat, reheat it on the griddle or pan until warmed through and set aside. Spoon the canned refried beans onto the griddle and warm them up.
Crisp the Tortillas.
On the griddle I add a little bit of avocado oil and toast my tortillas on medium heat until they get crispy on both sides.

If you want to take the time to fry them, heat up some oil to 350°F and fry your tortillas until they are golden brown.
Set the tortillas aside and place them on paper towels to drain excess oil.
Assemble the pizzas.
To assemble the Mexican Pizzas, spread a thin layer of refried beans on top of each crispy tortilla. Next, add a layer of your seasoned beef and then some shredded Mexican cheese.
Top with another crispy tortilla. Spread a thin layer of enchilada sauce on the top tortilla, then sprinkle generously with Mexican blend cheese.

If you are using your griddle and have a lid, close the lid with the heat on low to melt all the cheese and give a final crisp on the bottom tortilla. If making them inside, place into an oven at 350 for 3-5 minutes.

Top and Serve.
Top each pizza with your favorite taco toppings. I go pretty simple here and use diced tomatoes, green onion and a drizzle of sour cream.
If I have some cotija cheese, I like to grate that on top as well. For a spicy kick serve with salsa or hot sauce.

How to store leftovers.
Slice your Mexican pizzas into serving size pieces and store in an airtight container. You can refrigerate for up to 4 days.

To reheat them, place them into your air fryer or bake in your oven for best results. The microwave will make them soggy, but will do in you're in a hurry to warm them up.

Ingredients
- 8 Flour Tortillas (Fajita size)
- 1 pound of ground beef
- 1 tablespoon of taco seasoning
- 1 16 oz can of refried beans
- 2 cups of Mexican Blend cheese
- 1 large diced tomato
- 1 10 oz can of red enchilada sauce
- ½ cup of sour cream
- ¼ cup green onions diced
Instructions
- Preheat your flat top griddle to medium high heat.
- Cook your ground beef on the griddle until browned and add taco seasoning of your choice to season.
- Warm up refried beans for 2-3 minutes and set ground beef and refried beans to the side.
- Add a layer of avocado oil to griddle and toast tortillas for 1-2 minutes on both sides.
- To assemble the Mexican pizzas, add a layer of refried beans to the bottom of the first tortilla followed by a layer of ground beef and cheese.
- Place top tortilla on and add a layer of red enchilada sauce and more cheese. Close the lid of your griddle or cover each Mexican Pizza to melt cheese and give the bottom tortilla a final toast.
- Top each Mexican pizza with diced tomato, green onion and sour cream. Add additional toppings if desired. Cut into slices and serve immediately.
