This pan dish is super easy to make and is the perfect side dish for holiday dinners, or for any occasion. The Brussels sprouts get golden brown and pair perfectly with the sautéed onions, crispy bacon, and balsamic glaze.

Large cast iron skillet
Thick-cut bacon
Yellow onion
Brussels sprouts
Salt, black pepper, garlic powder
Brown sugar
Balsamic glaze
How to make roasted Brussels sprouts with bacon.
Cooking the bacon and onions.
First dice up a half pound of bacon and also 1 yellow onion. Heat up a large cast iron skillet on medium high heat. Add the diced bacon and cook them until crispy.
This should take about 5-7 minutes. Remove the bacon from the pan and set aside.

Keep the bacon grease in the skillet and reduce the heat of your stove top to medium. Then, add your diced yellow onion into the same cast iron pan and sauté them in the bacon fat until softened and cooked through.

Adding the Brussels sprouts
Wash and Quarter your Brussel sprouts. You may need to remove some of the outer leaves if they are starting to get brown.

Then, add them into the same pan as the onions. Also add back the bacon.
Season everything with a little salt, black pepper and garlic powder, as well as brown sugar. Give everything a good mix to incorporate. Try your best to spread everything into a single layer as it will help them crisp up.

Cooking and serving.
Place the cast iron pan into your oven at 375°F for 30-40 minutes, or until you have crispy Brussels sprouts.The cooking time will vary a little, just keep an eye on it.
Carefully remove the pan from the oven and drizzle on some balsamic glaze to finish. This is the best way to make these sprouts, in my opinion, and the first time you try, you'll see why!

Storing and reheating.
Store your Brussels sprouts in an airtight container for up to 4 days. To reheat them spread them back out onto a baking sheet and bake at 350 until warmed through. The air fryer also works great to not only reheat them but to crisp them up.
FAQS.
Why use a cast iron pan, can I use a large sheet pan?
A cast iron pan is a great conductor of heat and will stay very hot, helping the Brussels sprouts to get nice and crispy. Besides that, it makes a great rustic presentation. A large sheet pan works good too, especially if making in large amounts.
Can I add parmesan cheese?
Parmesan cheese can be a delicious addition on top of the Brussels sprouts. Just make sure you hold back a little on the salt when seasoning as you already have salty bacon and salty cheese to account for.
Can I make a glaze with balsamic vinegar?
To make a glaze with balsamic vinegar, simmer 1 cup of the vinegar with a ½ cup of brown sugar. It will reduce in about 10-15 minutes and thicken more as it cools.

Ingredients
- 1 lb thick cut bacon diced
- 1 medium yellow onion diced
- 3 cups brussels sprouts quartered
- ¼ cup light brown sugar
- 1 tablespoon of salt, pepper and garlic powder blend (or 1 teaspoon of each)
- 2 tablespoons balsamic glaze
Instructions
- Prepare ingredients by dicing the bacon, yellow onion, and washing and quartering the Brussels sprouts.
- Heat up a large 12 inch cast iron pan on medium high heat, and sauté the bacon until crispy, about 5-7 minutes.
- Remove the bacon from the grease and set aside. Leave about a ¼ cup of grease in the skillet and decrease the heat to medium. Add the yellow onions in the same pan and sauté for 5-7 minutes minutes until softened. Preheat your oven to 375°F.
- Once the onions have softened, add back the bacon and Brussels sprouts. Season with the salt, pepper, garlic blend and brown sugar. Stir well to combine.
- Place cast iron pan in the oven and bake at 375°F for 30-40 minutes until Brussels sprouts have cooked through and have gotten crispy on the edges.
- Remove the cast iron pan from the oven and drizzle the tops of the Brussels sprouts with balsamic glaze.
