Oven roasted brussles sprouts with bacon

  • 1 lb thick cut bacon diced
  • 1 medium yellow onion diced
  • 3 cups brussels sprouts quartered
  • 1/4 cup light brown sugar
  • 1 tablespoon of salt, pepper and garlic powder blend (or 1 teaspoon of each)
  • 2 tablespoons balsamic glaze

Instructions

  1. Prepare ingredients by dicing the bacon, yellow onion, and washing and quartering the Brussels sprouts.
  2. Heat up a large 12 inch cast iron pan on medium high heat, and sauté the bacon until crispy, about 5-7 minutes.
  3. Remove the bacon from the grease and set aside. Leave about a 1/4 cup of grease in the skillet and decrease the heat to medium. Add the yellow onions in the same pan and sauté for 5-7 minutes minutes until softened. Preheat your oven to 375°F.
  4. Once the onions have softened, add back the bacon and Brussels sprouts. Season with the salt, pepper, garlic blend and brown sugar. Stir well to combine.
  5. Place cast iron pan in the oven and bake at 375°F for 30-40 minutes until Brussels sprouts have cooked through and have gotten crispy on the edges.
  6. Remove the cast iron pan from the oven and drizzle the tops of the Brussels sprouts with balsamic glaze.
