
These bacon-wrapped pickle shots start with crunchy pickles, carefully wrapped in thick-cut bacon to create a unique shot glass. They're then filled with a rich, creamy mixture of cream cheese and shredded Colby Jack cheese.
Smoked to perfection, each bite delivers a burst of flavor, enhanced by a glossy coating of sweet and tangy BBQ sauce. These are very similar to my Smoked Pig Shots recipe which is my most popular appetizer.

Ingredients you need to make this recipe:
Cream cheese
Sour cream
Colby jack cheese
Whole dill pickles (Cut into thick slices)
BBQ Seasoning (Try my All Night Seasoning)
Thick cut bacon
BBQ Sauce
How to make bacon wrapped pickle shots
Making the cream cheese filling.
In a bowl combine softened cream cheese, sour cream, shredded colby jack cheese and bbq seasoning together. This is going to be the filling for the pickle shots.
Place the filling into a piping bag or a zip lock bag with the corner snipped off. This will be used to pipe the filling into each pickle shot.
Making the pickle shots.

To make the pickle shots take some thick cut bacon (very important) and cut it in half. Also take whole dill pickles and cut ½ inch pieces that will be used for the base.
Simply take one piece of bacon and wrapped it around the pickle slice to form a "Shot glass."
Then carefully place a toothpick through the bacon, into the pickle and through the other side. This will keep everything nice and tight and allow the filling to stay inside the pickle shot.
Tips and tricks.
If you have a little overlap in the bacon when wrapping, that works great. Try your best to wrap the bacon around the pickle as tight as possible.
If the bacon is having a hard time staying upright, place the bacon in your freezer for 30 minutes and then try wrapping with the semi frozen pieces.
Filling the pickle shots.
Once your shots are formed, pipe the cream cheese filling into each pickle shot.
Cooking the pickle shots.
I smoke my pickle shots at 350°F for about an hour or a little longer until the bacon gets cooked all the way through.
You can also do this in your oven or air fryer at the same temperature or a little higher if rushed on time.

About 10 minutes before I remove the pickle shots from the smoker I like to brush on a sweet bbq sauce. Just use your favorite bbq sauce here to give it a little sweetness , color and shine.

Bacon Wrapped Pickle Shots
- Total Time: 1 hour

Ingredients
- 8 ozs softened cream cheese
- ¼ cup sour cream
- ½ cup shredded colby jack cheese
- 1 tablespoon bbq seasoning
- 8 slices of thick cut bacon (Cut in half)
- 16 dill pickle slices (About the diameter of a quarter)
- ¼ cup of bbq sauce
Instructions
- Make the filling by combining softened cream cheese, sour cream, shredded colby jack cheese and bbq seasoning.
- Place the filling into a piping bag or a zip lock bag and cut the corner off the bag if using. Set aside.
- Cut whole dill pickles into ½ inch slices and cut thick cut bacon slices in half. Wrap each piece of bacon around each pickle slice to form a shot glass. Place a tooth pick through the bacon and pickle to hold it together. (See photos in blog for reference)
- Pipe the cream cheese mixture into each pickle shot almost to the top.
- Bake or smoke at 350°F for 30 to 60 minutes until the bacon is cooked and crisped up to your liking.
- 10 minutes before the pickle shots are ready, brush on your favorite bbq sauce to each one.
- Allow the pickle shots to cool off before removing the toothpick when ready to eat! Enjoy.
Notes

*If the pickle slices are really big in diameter, you may only be able to use one slice of bacon per pickle.
