Three Cheese Smoked Spinach Artichoke Dip

Ingredients

  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • 1 teaspoon each: salt, black pepper, garlic powder, smoked paprika, crushed red pepper
  • 10 oz jarred artichoke hearts, drained and chopped
  • 10 oz spinach, wilted (or thawed frozen spinach, with excess water squeezed out)
  • ½ cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, shredded
  • ½ cup gouda cheese, shredded

Instructions

  1. Preheat smoker – Set your smoker to 225°F using a mild wood like pecan, oak, or hickory.
  2. Mix the base – In a large bowl, combine softened cream cheese, sour cream, seasonings, artichoke hearts, spinach, and all the cheeses. Stir until well blended.
  3. Transfer to skillet – Spread mixture evenly into a cast iron skillet or oven-safe baking dish. Top with more cheese. 
  4. Smoke it – Place skillet in the smoker and cook for an hour until the dip is hot and bubbly.
  5. Finish under broiler – Move the skillet into your oven and broil for 2–3 minutes, just until the top turns golden and slightly crispy.
  6. Serve hot – Grab some toasted baguette slices, tortilla chips, or crackers and dig in.

Notes

No smoker? Bake at 350°F for 20 minutes, then broil to finish.
