Smashed Burgers with Baconnaise

For the Baconnaise

  • 1/2 cup mayonnaise
  • 6 slices bacon, cooked crispy and finely chopped
  • 1/4 cup hot honey
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon red pepper flakes (adjust to taste)

For the smash burgers 

  • 1 lb ground beef (80/20 blend)
  • 1 teaspoon of olive oil
  • Kosher salt and black pepper, to taste
  • 4 slices American cheese
  • 4 burger buns, toasted
  • Optional: sliced pickles, lettuce and grilled onions.

Instructions

  1. Make the Baconnaise: In a bowl, mix the mayonnaise, chopped bacon, hot honey, ketchup, mustard, red pepper flakes, and parsley until well combined. Set aside or chill until ready to use.
  2. Prep the griddle: Heat a cast iron skillet or griddle over high heat until very hot. Add a small amount of oil to griddle where burgers will be smashed.
  3. Form and smash the patties: Divide the ground beef into 8 loose 2-ounce balls. Place each ball onto the hot griddle and press it flat with a heavy spatula or burger press. Season with salt and pepper.
  4. Cook and flip: Let the patties cook for 1–2 minutes until crispy on the bottom. Flip, then immediately top with a slice of cheese. Cook for 1 more minute to melt the cheese.
  5. Toast the buns: While the burgers cook, lightly toast your burger buns on the griddle or in a toaster for extra texture.
  6. Assemble the burgers: Spread Baconnaise on both sides of the buns. Stack 2 patties per burger (or go single if preferred), and add any optional toppings like pickles, lettuce or grilled onions.
  7. Serve hot: Serve immediately while the cheese is melty and the Baconnaise is dripping.

Notes

The amount of servings are based upon if you are using 1 or 2 patties.
