These easy smash burger tacos combine the crispy edges of a classic smashburger with all your favorite taco toppings, wrapped in a tortilla and cooked right on a hot griddle for maximum flavor.

  • Total Time: 20 minutes
  • Yield: 4-6 1x

Ingredients

Scale
  • 1 lb lean ground beef
  • 6 small flour tortillas
  • 6 slices American cheese
  • 1 tablespoon salt, black pepper, garlic powder (or use All Day Rub)
  • Shredded iceberg lettuce
  • Diced tomatoes
  • Diced onions
  • Dill pickles, sliced
  • Your favorite burger sauce or homemade Big Mac-style sauce (see below)

Optional Homemade Burger Sauce:

  • ½ cup mayo
  • 1 tbsp ketchup
  • 2 tsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp relish
  • Few dashes Worcestershire sauce
  • Pinch of garlic powder and black pepper

Instructions

  1. Press the beef: Take a small handful of ground beef and press it flat onto each tortilla, spreading to the edges (about ¼ inch thick). The meat will shrink slightly as it cooks.
  2. Season: Season the beef side generously with salt, pepper, and garlic powder—or use All Day Rub for extra flavor.
  3. Cook meat-side down: Heat a flat top, cast iron skillet, or large pan over medium-high heat. Place the tortillas beef-side down and cook for 2–3 minutes, until the meat is browned and crispy.
  4. Flip and melt: Flip each taco and cook the tortilla side for another 1–2 minutes. Place a slice of American cheese on top of the beef and let it melt while the bottom crisps up.
  5. Add toppings: Remove from heat and top with lettuce, tomato, onion, pickles, and your burger sauce or condiments of choice.
