- 4 boneless skinless chicken thighs
- 1 cup all-purpose flour
- 2 tablespoons BBQ seasoning
- 2 large eggs
- 4 cups prepared waffle batter
- 1/4 cup maple syrup, plus more for dipping
- 8 slices cooked bacon
- 2 cups Vegetable or canola oil, enough to come halfway up the chicken
- Add flour and BBQ seasoning to a bowl and mix until combined.
- Crack the eggs into a separate bowl and whisk well to create the egg wash.
- Coat each chicken thigh in the seasoned flour, then into the egg wash, and back to the seasoned flour and coat completely.
- Heat enough oil to cover approximately half of the chicken in a skillet over medium-high heat.
- Carefully add the breaded chicken to the hot oil.
- Fry for 2–3 minutes per side, or until golden brown and the internal temperature reaches 165°F.
- Remove the chicken from the oil and set aside to drain.
- Prepare the waffle batter according to package instructions.
- Add 1/4 cup maple syrup to the waffle batter and whisk until combined.
- Cook the waffles in a waffle maker according to the manufacturer's instructions.
- For extra crispy waffles, toast the cooked waffles in a toaster until they reach your desired crispness.
- Assemble each sandwich with a waffle, fried chicken, and 2 slices of cooked bacon.
- Top with another waffle and serve immediately with additional maple syrup for dipping.
