- Brine turkey wings overnight, or up to 24 hours.
- Rinse wings off in cold water and pat them dry with a paper towel. Apply olive oil to wings as a binder, and season.
- Smoke at 275°F for up to 2 hours, or until the internal temperature of the wings reach 175°F.
- Once they reach that point, you can brush on bbq sauce or cowboy butter and continue cooking for another 10-15 minutes.
- Consider increasing the temperature of the smoker up to 400°F towards the end of the cook, to allow the skin to get crispy. Serve while still warm.
