Smoked sausage roll coated in BBQ seasoning, smoked low and slow, and finished with BBQ sauce for an easy, smoky appetizer perfect for game day and BBQs.

Ingredients

  • 1 (1–2 lb) sausage roll or sausage chub
  • 2 tablespoons BBQ seasoning, or enough to generously coat the sausage
  • ½ cup BBQ sauce, plus more for serving

Instructions

  1. Preheat your smoker to 275°F.
  2. Remove the sausage from its packaging and generously coat all sides with BBQ seasoning.
  3. Place the sausage directly on the smoker grates and smoke at 275°F until the internal temperature reaches approximately 145°F, about 1–1½ hours depending on size.
  4. Brush the sausage generously with BBQ sauce once it reaches 145°F.
  5. Return the sausage to the smoker and continue cooking until it reaches approximately 160°F.
  6. Remove from the smoker and rest for 5 minutes.
  7. Slice the sausage into rounds and serve with extra BBQ sauce.
