If you're a fan of cheeseburgers and queso, this Smoked Cheeseburger Queso Dip combines the best of both worlds into one ridiculously cheesy, smoky appetizer. Imagine everything you love about a backyard cheeseburger—juicy beef, crispy bacon, tangy pickles, onions, tomatoes, mustard, and ketchup—mixed into a rich, creamy queso and kissed with smoke.

Ingredients

  • 8 hamburger patties (about 2 pounds of ground beef)
  • 8 slices bacon, cooked and crumbled
  • 8 oz cream cheese
  • 8 oz cheddar cheese
  • 8 oz Monterey Jack cheese
  • 1/2 cup evaporated milk
  • 1/2 cup diced tomato
  • 1/4 cup diced onion
  • 1/4 cup chopped pickle chips
  • 2 tbsp mustard
  • 2 tbsp ketchup
  • 1 tbsp hot sauce
  • 1 tbsp salt, pepper, and garlic seasoning
  • Green onions for garnish

Instructions

  1. Preheat grill to medium-high heat.
  2. Season burger patties with salt, pepper, and garlic seasoning.
  3. Grill burgers until they reach 160°F internal temperature.
  4. Rest and dice burgers into small pieces.
  5. Preheat smoker to 250°F.
  6. Add burgers, bacon, cream cheese, cheddar, Monterey Jack, evaporated milk, tomato, onion, pickles, mustard, ketchup, and hot sauce to a cast iron skillet.
  7. Place pan on smoker and cook for 45–60 minutes, stirring every 15–20 minutes until everything is melted and combined. (If you want a smokier flavor, continue smoking for an additional hour) 
  8. Continue cooking until the cheese is melted and creamy.
  9. Top with reserved bacon and green onions.
  10. Serve immediately.
