For the Hot Dogs:
- 6 hot dogs
- 6 brioche hot dog buns
For the Sloppy Joe Mixture:
- 1 lb ground beef
- 1 small yellow onion, diced
- 1 tbsp olive oil
- 1/2 cup ketchup
- 1/4 cup yellow mustard
- 2 tbsp Worcestershire sauce
- 1/2 cup brown sugar
- 1 tbsp BBQ seasoning (or use my All Night Rub)
- Salt, pepper, garlic powder (or use my All Day Rub)
For the Cheese Sauce:
- 8 oz deli-style American cheese (or cheddar), chopped
- 1/2 cup whole milk
- 1 tbsp unsalted butter
- Optional: 1/2 tsp cornstarch (to thicken)
Instructions
- Make the Sloppy Joe: In a large skillet over medium heat, sauté diced onion in olive oil. Season with salt, pepper, and garlic powder or All Day rub.
- Once softened (5–10 min), add ground beef and break it up with a wooden spoon. Season with BBQ rub and cook until browned.
- Stir in ketchup, mustard, Worcestershire sauce, and brown sugar. Simmer on low for a few minutes.
- Make the Cheese Sauce: In a saucepan over medium-low heat, melt butter. Stir in milk.
- Add cheese a little at a time, stirring until fully melted and smooth. If it’s too thin, add cornstarch or more cheese. If too thick, add a splash more milk.
- Grill the Hot Dogs and Toast the Buns: Grill hot dogs on a grill or griddle over medium-high heat until browned.
- Split brioche buns (don’t cut all the way through) and toast open-faced until golden.
- Assemble the Sloppy Joe Dogs: Place grilled hot dogs in toasted buns. Top with a big spoonful of Sloppy Joe mix, followed by a drizzle of cheese sauce. Optional: Add sliced jalapeños or chives.
