For the Hot Dogs:

  • 6 hot dogs
  • 6 brioche hot dog buns

For the Sloppy Joe Mixture:

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 1 tbsp olive oil
  • 1/2 cup ketchup
  • 1/4 cup yellow mustard
  • 2 tbsp Worcestershire sauce
  • 1/2 cup brown sugar
  • 1 tbsp BBQ seasoning (or use my All Night Rub)
  • Salt, pepper, garlic powder (or use my All Day Rub)

For the Cheese Sauce:

  • 8 oz deli-style American cheese (or cheddar), chopped
  • 1/2 cup whole milk
  • 1 tbsp unsalted butter
  • Optional: 1/2 tsp cornstarch (to thicken)

Instructions

  1. Make the Sloppy Joe: In a large skillet over medium heat, sauté diced onion in olive oil. Season with salt, pepper, and garlic powder or All Day rub.
  2. Once softened (5–10 min), add ground beef and break it up with a wooden spoon. Season with BBQ rub and cook until browned.
  3. Stir in ketchup, mustard, Worcestershire sauce, and brown sugar. Simmer on low for a few minutes.
  4. Make the Cheese Sauce: In a saucepan over medium-low heat, melt butter. Stir in milk.
  5. Add cheese a little at a time, stirring until fully melted and smooth. If it’s too thin, add cornstarch or more cheese. If too thick, add a splash more milk.
  6. Grill the Hot Dogs and Toast the Buns: Grill hot dogs on a grill or griddle over medium-high heat until browned.
  7. Split brioche buns (don’t cut all the way through) and toast open-faced until golden.
  8. Assemble the Sloppy Joe Dogs: Place grilled hot dogs in toasted buns. Top with a big spoonful of Sloppy Joe mix, followed by a drizzle of cheese sauce. Optional: Add sliced jalapeños or chives.
