Made with just four simple ingredients—pork belly, BBQ rub, BBQ sauce, and skewers—these crispy, caramelized pinwheels are packed with flavor and surprisingly easy to make. While they can be cooked on a smoker, this version is made right in the oven, making it perfect for anyone craving BBQ-style flavor without firing up the grill.

Ingredients

  • 2 pounds pork belly, sliced into long strips
  • 3 tablespoons BBQ rub
  • ½ cup BBQ sauce
  • 4 skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes. 
  2. Preheat oven to 300°F and place a wire rack on a baking sheet.
  3. Season pork belly strips on all sides with BBQ rub.
  4. Roll each strip into a pinwheel and secure with a skewer.
  5. Arrange pinwheels on the wire rack.
  6. Bake for 2 hours, until tender and the fat is rendered. (Internal temperature is 175 F) 
  7. Brush with BBQ sauce and bake for 30 minutes or until the internal temperature reaches 200 F. 
  8. Rest for 5 minutes, then serve.
