Pork Belly Burnt Ends

Ingredients

  • 5 lb slab of porkbelly
  • 2 tablespoons of bbq seasoning
  • 1/2 stick of unsalted butter
  • 1/4 cup of light brown sugar 
  • 1/4 cup of honey 
  • 1/4 cup of BBQ Sauce 

Instructions

  1. Cut your pork belly into 1 inch cubes
  2. Season all sides of the pork belly with a sweet bbq rub. I like to use my All Night Seasoning or you can use my homemade bbq seasoning if you want.
  3. Set your smoker at 250°F  and place your pork belly directly on the grill grates 
  4. Smoke pork belly for up to 4 hours.
  5. Remove the pork belly once the internal temperature has reached 175°F .
  6. Place pork belly into a foil pan and add pats of butter, honey, brown sugar and bbq sauce. Stir together. 
  7. Cover foil pan and place it back into your smoker until the pork belly reaches 205°F  internal. Another 1-2 hours. 
  8. Remove pork belly from the smoker, give it a finally toss in the sauce, then serve on some butcher paper! 

Notes

The time it takes to get your pork belly up to the right temperatures depends on the thickness of the cubes. Always use an internal meat thermometer.
