This Loaded Potato Casserole is creamy, cheesy, and packed with bacon, then smoked at 225°F for incredible flavor. The perfect BBQ and tailgate side dish!

Ingredients
32 ounces frozen shredded hash browns
4 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup milk
2 tablespoons butter, melted
2 cups shredded cheddar cheese, divided
1/4 cup cooked diced bacon
1 tablespoon salt, pepper & garlic seasoning
1/4 cup sliced green onions
Instructions
Preheat your smoker to 225°F.
In a large bowl, combine hash browns, sour cream, cream cheese, milk, melted butter, shredded cheddar cheese, and seasoning.
Fold everything together until well combined.
Transfer the potato mixture to a cast iron skillet and spread evenly.
Top with extra shredded cheddar cheese and remaining diced bacon.
Place the cast iron skillet onto the smoker.
Smoke at 225°F for 1 hour, or until the casserole is hot and bubbly and the cheese is melted.
Remove from the smoker and top with sliced green onion.
