This Loaded Potato Casserole is creamy, cheesy, and packed with bacon, then smoked at 225°F for incredible flavor. The perfect BBQ and tailgate side dish!

Ingredients

  • 32 ounces frozen shredded hash browns
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup cooked diced bacon
  • 1 tablespoon salt, pepper & garlic seasoning
  • 1/4 cup sliced green onions

Instructions

  1. Preheat your smoker to 225°F.
  2. In a large bowl, combine hash browns, sour cream, cream cheese, milk, melted butter, shredded cheddar cheese, and seasoning.
  3. Fold everything together until well combined.
  4. Transfer the potato mixture to a cast iron skillet and spread evenly.
  5. Top with extra shredded cheddar cheese and remaining diced bacon.
  6. Place the cast iron skillet onto the smoker.
  7. Smoke at 225°F for 1 hour, or until the casserole is hot and bubbly and the cheese is melted.
  8. Remove from the smoker and top with sliced green onion.
