Ingredients

- 1 pound of jumbo shrimp (peeled and deveined)
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 2 cups shredded lettuce
- 6 slices of tomato
- 1/4 cup pickle chips
- 2-3 tablespoons of remoulade sauce
- 4 French rolls or baguette cut into individual portions
- Salt and pepper to taste
Instructions
- Skewer shrimp, drizzle with olive oil and season with Cajun seasoning.
- Grill shrimp on medium heat over charcoal or gas. Remove once the internal temperature of the shrimp reach 150°F and are cooked through. Toast your French rolls.
- Remove shrimp from skewers and gather remaining ingredients.
- Onto a cutting board add shredded lettuce, sliced tomatoes, pickles and chop into bite sized pieces. Season with salt and pepper.
- Add grilled shrimp and remoulade sauce on top of chopped ingredients and chop again being careful to leave the shrimp in bigger chunks.
- Once the ingredients are chopped, scoop into French rolls and serve with extra remoulade sauce on top if desired.
