Easy homemade coleslaw

Ingredients

Scale
  • 1/2 cup shredded red cabbage
  • 1 cup shredded green cabbage 
  • 1/2 cup grated carrot 
  • 1/4 cup mayonnaise 
  • 1 tablespoon dijon mustard
  • 1 tablespoon white sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon celery seeds
  • 2 tablespoons fresh lemon juice 
  • Salt and pepper to taste 

Instructions

  1. Cut cabbage and carrots thinly using a sharp knife or mandolin. 
  2. In a bowl mix remaining ingredients together and toss cabbage and carrots in. 
  3. Stir well to combine and refrigerate. Best eaten an hour after its been chilled.
