Chick-fil-a inspired honey pepper pimento chicken sandwich featuring grilled chicken thighs and homemade pimento cheese!

Ingredients

Scale
  • 2 boneless skinless chicken thighs
  • 2 tablespoons of chicken rub or all purpose bbq rub
  • 1 tablespoon of olive oil
  • 2 brioche buns
  • 8-10 pickled jalapeños
  • 1 cup shredded lettuce
  • 2 tablespoons honey

Pimento Cheese 

  • 1 cup of shredded cheddar cheese
  • 2 ozs jarred pimentos
  • 1/2 cup mayonnaise
  • 4 ozs softened cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Coat chicken thighs with olive oil and season with chicken rub or all purpose bbq rub.
  2. Grill chicken thighs on medium high heat, flipping back and forth until cooked to an internal temperature of 165°F.
  3. Make pimento cheese by combining all ingredients together and mixing.
  4. Toast brioche buns if desired and build the sandwich with a layer of shredded lettuce, followed by 4-5 pickled jalapeños, 1 grilled chicken thigh, a big spoonful of pimento cheese, and a drizzle of honey.
