Make this easy Bourbon Peach Cornbread Cobbler on the smoker with sweet peaches, brown sugar, cinnamon, bourbon, and golden cornbread, finished with honey.

Ingredients
1 (15.25 oz) can sliced peaches, drained
¼ cup bourbon, optional
1 teaspoon vanilla extract
½ cup brown sugar
1 teaspoon ground cinnamon
1 box cornbread mix (I used Krusteaz brand)
2/3 cup milk
1 egg
2/3 cup melted butter
2 tablespoons honey
Instructions
Set your smoker to 350°F.
Add sliced peaches, bourbon, vanilla extract, brown sugar, and cinnamon to a cast iron skillet. Stir until well combined.
Prepare the cornbread mix according to the package directions. (Mine called for melted butter, milk and 1 egg)
Pour the cornbread batter evenly over the peach mixture.
Place the skillet on the smoker and cook at 350°F for 30–45 minutes, or until the cornbread is golden brown and cooked through.
Insert a toothpick into the center of the cornbread. It should come out clean or with a few moist crumbs.
Remove the skillet from the smoker and drizzle honey over the warm cornbread.
Allow the cobbler to cool for a few minutes, then serve warm with vanilla ice cream if desired.
