BBQ Chicken Leg Quarters (Crispy and juicy)

Ingredients

  • 4-6 skin on chicken leg quarters
  • 1 bottle Italian dressing (Enough to cover chicken and marinate)
  • 1/4 cup bbq seasoning of choice (Or use homemade version here)
  • 1/2 cup bbq sauce of choice

Instructions

  1. Place chicken leg quarters in a large bowl or gallon freezer bags, and pour enough Italian dressing to cover the chicken, then seal the container and refrigerate to marinate overnight.
  2. Preheat your grill to roughly medium high (About 350-400°F) and set it up for two zone cooking. (One hot side and one cool side)
  3. Remove chicken from Italian dressing marinade and pat excess dressing off the chicken with a paper towel. Then season the chicken with bbq seasoning of choice.
  4. Cook the chicken quarters over direct heat for a few minutes on each side and then finish on indirect heat, skin side up for the remainder of the cook.
  5. Continue cooking the chicken until the internal temperature reaches 165°F. Brush on a layer of your favorite bbq sauce, close the lid and continue cooking the chicken until it reaches 175°F.
  6. Repeat the same process at 175°F by brushing on another layer of bbq sauce.
  7. Remove the chicken quarters off the grill when they are temping about 185°F (The chicken will not be overcooked).
  8. Rest for 15 minutes and serve.

Notes

  • If you like the chicken extra crispy and charred,  finish with your final coating of bbq sauce, then grill them over direct heat for a few minutes on each side. The sugars in the bbq sauce will caramelize and darken, and the edges of the chicken around the skin will char up.
